Easy Weeknight Meal
Looking for a simple dinner? I usually am. This is one that I have made few times, and it is always a hit. What I love about this recipe is that it pretty much cooks itself, but the end result is yummy and homey! It’s also fast—ready in only half an hour!
All you need is a box of Zatarain’s Red Beans and Rice, some sausage, a pepper, an onion, and a little olive oil. I don’t even bother adding any extra seasoning because the Red Bean’s and Rice sauce already has so much flavor!
This recipe makes about 6 healthy, hearty servings. You could certainly stretch it to feed a larger group by making a salad or serving with some garlic bread as well!

1 Box Zatarain’s Family Size Red Beans and Rice
2 – 3 Tbs. Olive Oil
4.5 Cups Water
14 oz. Smoked Sausage or Kielbasa (I like to buy a big package because it is cheaper per oz.)
1 Yellow Onion
1 Red Pepper
Prepare Zatarain’s Red Beans and Rice according to package directions. You will need olive oil and water (the box says 2 Tbs. of olive oil, but I only put in 1).
Cut red pepper into thin strips. Dice onion. In large skillet, hit 1 Tbs. Olive oil on medium high heat. Add pepper and cook 5 minutes or until it starts to soften. Add onion, stir and cook another five minutes or until the onion starts to turn translucent.
Slice sausage into bite size pieces, add to skillet and brown. Reduce heat and continue cooking sausage, onion, pepper mixture for 5-10 minutes.
When Red Beans and Rice is finished, add to skillet with sausage, onion, pepper, mix. Stir all ingredients together. If needed, continue cooking on low heat to thicken sauce.
